Menu Maker: Recipes from Class 5 at West Twyford

Sponge Cake

This cake is mixed in the same tin in which you cook it. It must be cooled completely before removing it from the tin as it crumbles. It is a European recipe

Serves 8-10

Ingredients
5 oz melted margarine or butter
1 ½ cup plain flour
1 cup sugar
1 tsp. bicarbonate of soda
1 tsp. baking powder
1 tsp. vanilla essence
1 cup warm water
2 Tbsp. vinegar
4 oz chocolate

Method
1. Mix the dry ingredients in a greased tin.
2. Stir in the melted margarine, water, vanilla and vinegar
3. Mix well and bake for 40 mins in the centre of a moderately hot oven
4. When the cake is cold, melt the chocolate in the microwave or over a saucepan of boiling water, and pour and spread over the cold cake.
